Fresh & Flavorful Tomato Spinach Shrimp Pasta

Ingredients:

  • 8 oz spaghetti or linguine
  • 1 lb large shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 4 garlic cloves, minced
  • 1 cup cherry tomatoes, halved
  • 2 cups fresh spinach
  • 1/2 cup chicken broth (or white wine)
  • 1/4 cup grated Parmesan cheese
  • 1/2 tsp red pepper flakes (optional)
  • Salt and black pepper to taste

Directions:

  1. Cook pasta according to package instructions until al dente. Reserve 1/2 cup pasta water, then drain.
  2. In a large skillet, heat olive oil over medium heat. Add shrimp, season with salt and pepper, and cook 2-3 minutes per side until pink. Remove from skillet and set aside.
  3. In the same skillet, add garlic and sauté until fragrant, about 1 minute. Add cherry tomatoes and cook until softened, about 3-4 minutes.
  4. Stir in chicken broth (or white wine), scraping up any browned bits from the bottom of the skillet. Let simmer for 2 minutes.
  5. Add spinach and cook until wilted, about 1 minute. Return shrimp to the skillet, and toss to combine.
  6. Add cooked pasta to the skillet, tossing everything together. Use reserved pasta water to loosen the sauce, if needed.
  7. Sprinkle with Parmesan cheese and red pepper flakes (if using). Serve warm and enjoy!
