Gluten Free Valentine Brownies:
Happy Valentine’s Day!
It’s Valentine’s Day again. Time is flying by and even though it’s chilly outside I’m feeling springtime right around the corner. I’m not a big sweets person but the kids and I made these Gluten Free Brownies the other day and cut them into hearts getting us in the spirit of Valentine’s Day. This pre-mixed package from Trader Joe’s makes absolutely delicious brownies. So delicious that my family ate all of them at once. Yikes!
I’m trying to go more gluten free because my 9 year old son Tyler is autistic and when I cut back on gluten in his diet it seems to help reduce his stimming. It’s always a challenge to figure out what works for Tyler but through much trial and error over the years and constantly working with him on his journey with autism he’s definitely has made me a better Mom and Woman. What doesn’t kill you makes your stronger! Right?!

Trader Joe’s Brownie Mix
1/2 cup vegetable oil
1/4 cup water
Preheat oven to 350F. Spray an 8×8 baking pan with non-stick cooking spray. Combine contents with ingredients and mix together. Add chocolate chips or dried fruit, if desired. Bake for approximately 30 minutes or until toothpick comes out clean.
