Turkey Meatloaf Muffins…

My super-delicious and incredibly easy Turkey Meatloaf Muffins recipe has become one of my family’s absolute favorites. It’s imperative that we have no-brainer, fuel-focused meals that can be prepared ahead of time and turn into week long ready made meals, or a quick on-the go-lunch or no-effort dinners. There’s just something nice about knowing we have something waiting in the fridge that will give us the energy we need to get through the day that taste’s great.

Turkey Meatloaf Muffins are packed with high-protein ground turkey, fiber-filled oats, lots of veggies, and some egg whites for good measure. I think it’s fair to say that these little guys are a lean and mean kind-of-muffin!

These little gems are so yummy, yummy, yummy! The whole family will love them and so will you because they are super easy to make. What a fun way to present meatloaf.  Even meatloaf haters love them! The best part about these skinny muffins is… that each muffin is 115 calories, 2 grams of fat So low in calories and fat you can easily enjoy 2 of them!

Turkey Meatloaf Muffins…

  1. 2 lbs ground turkey (or chicken)

  2. 3 egg whites

  3. 1 cup quick cooking oats

  4. 1/2 tsp ground cumin

  5. 1/2 tsp dried thyme

  6. 2 tsp dry yellow mustard

  7. 2 tsp black pepper

  8. 2 tsp chipotle pepper spice

  9. 1 tsp salt

  10. 2 tbsp garlic powder (2 cloves minced)

  11. 1 small onion (finely chopped)

  12. 2 celery stalks (finely chopped)

  13. 2 tablespoons Essence or grill seasoning

  14. 1 cup smoky barbecue sauce or ketchup (optional)

  15. Vegetable oil or extra-virgin olive oil

  1. Preheat oven to 375 degrees.

  2. Spray muffin pan with canola or olive oil.

  3. Mix all your ingredients together in one large bowl.

  4. Roll the mixture into balls and place in muffin pan. Muffins should be about the size of a racquetball. Top each meat loaf with a spoonful of extra sauce.

  5. Bake for 40 minutes.

Essence Seasoning

Inspired by Emeril Lagasse…

  1. 2½ tablespoons paprika

  2. 2 tablespoons salt

  3. 2 tablespoons garlic powder

  4. 1 tablespoon black pepper

  5. 1 tablespoon onion powder

  6. 1 tablespoon cayenne pepper

  7. 1 tablespoon dried leaf oregano

  8. 1 tablespoon dried thyme

  1. Combine all ingredients thoroughly and store in an airtight jar or container.
