These super-delicious and incredibly easy Turkey Meatloaf Cupcakes have become one of my family’s absolute favorites. It’s imperative that we have no-brainer, fuel-focused meals that can be prepared ahead of time and turn into week-long ready made meals, or a quick on-the go-lunch or no-effort dinners. There’s just something nice about knowing we have something waiting in the fridge that will give us the energy we need to get through the day and that tastes great.
Turkey Meatloaf Cupcakes are packed with high-protein ground turkey, fiber-filled oats, lots of veggies, and some egg whites for good measure. I think it’s fair to say that these little guys are a lean and mean kind-of-muffin!
These little gems are so yummy, yummy, yummy! The whole family will love them and so will you because they are super easy to make. What a fun way to present meatloaf. Even meatloaf haters love them! The best part about these skinny muffins is… that each muffin is 115 calories, 2 grams of fat. So low in calories and fat you can easily enjoy 2 of them!

2½ tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried leaf oregano
1 tablespoon dried thyme
Combine all ingredients thoroughly and store in an airtight jar or container.
