Tuna Salad with No Mayo… taste absolutely fabulous! Shh…no one will notice that there isn’t any fattening mayonnaise in this recipe, not even the kids! Leave out the mayo and replace with avocado, add some celery or red onion, lemon zest and juice, sprinkle with the green of cilantro or parsley, and Wow! Put it between two pieces of toast and you have a rather perfect tuna salad sandwich for the kids. For adults, it’s just the tuna salad on a bed of romaine lettuce, which is perfect!
Paleo Tuna Salad
Something I’m doing from here on out is meal prep, because making healthy food more convenient is the way to kick the convenience food habit and loose the extra pounds. What works for me is having a lot of different ingredients and meal components that are chopped and/or cooked, for quick and easy meals that can be thrown together at a moment’s notice. Since I work from home these make for super easy lunches and serves as a great time saver.

Tuna Salad with No Mayo!
1 5- ounce can tuna (preferably packed in olive oil, drained)
1/2 ripe avocado (roughly chopped)
1/2 cup minced celery
1/4 cup minced red onion or green onion
1 Tbsp olive oil
2 teaspoons lemon juice
1 teaspoon lemon zest
2 Tbsp chopped fresh cilantro or parsley
1/2 teaspoon kosher salt
Freshly ground black pepper
Place all of the ingredients in a medium bowl. Mix with a fork, mashing the avocado and breaking up the chunks of tuna as you go, until the ingredients are well combined. Add more oil or salt and pepper if necessary, serve on your favorite sandwich bread or toast.
