Stuffed “Upgraded” Avocados:
Summer break is starting today for my kids! Yikes, I’m happy that I don’t have to get up at the crack of dawn to pack lunches and rush out of the house but now I have to rearrange my schedule all week to get my work out on and my daily work done. It’s going to be a real juggling act until camp begins in a few weeks. It’s crazy how fast my kids are growing up, so instead of rushing around for the next few weeks I’m going to embrace the time to slow down and really appreciate them right now (ages 10 and 7) and enjoy just being their Mom. Yes, I always have things that need to get done but nothing is as rewarding as spending quality time with my babies!
Since I might miss a few work outs because they’re home, I’ve decided to keep my food all healthy. These delightful Stuffed Avocados are perfect for a quick and easy summer lunch. You can stuff the avocados with whatever you have leftover in your refrigerator or be as creative as you like! Avocados are a good source of unsaturated fat and are low in calories (140 for a half). Upgrade it with some combination of salty, sweet or creamy and you have a party in the palm of your hand. No plate required. I found this great idea in Martha Stewart Living Magazine!
