Treat Yourself this weekend…with a Chicken Panini


Chicken Panini:

Sometimes you need a little treat to make yourself feel good. This weekend, I treated myself to this amazing Chicken Panini, because I deserved a little extra treat after a long week. I’m at a crossroad in my life and have to make some important decisions.  I’m thankful to have choices, but it’s not always easy to know which path to take. I’m thinking, stratagizing and scratching my head on how to come up victorious. The ponders of life. So when it’s time to ponder, why not ponder while snacking on a good tasty Chicken Panini filled with all your favorite topings. This Chicken Panini recipe came from combining leftover grilled chicken, cilantro pesto and pepper jack cheese. Yes, I washed it all down with a big glass of Pinot Noir! Wow! I’m thinking clearer now! LOL!

Recipe for Chicken Panini:

Ingredients:

  1. 1 focaccia bread, quartered or wheat bread slices

  2. 1/2 cup homemade avocado-pesto dressing (recipe follows)

  3. 1 cup of sliced cooked chicken

  4. 1/4 cup diced red onion

  5. 1 cup shredded pepper jack cheese

Homemade Avocado-Pesto Dressing Recipe:

Ingredients:

  1. 1 ripe Hass avocado, pitted and peeled

  2. 1 Tbsp. chopped basil

  3. 1 Tbsp. chopped parsley

  4. 2 tsp. chopped tarragon

  5. 1 tsp. chopped garlic

  6. 3 Tbsp. lemon juice

  7. 1/3 cup extra-virgin olive oil

  8. 1 tsp. kosher salt

  9. Ground black pepper

Directions:

Put all ingredients for the avocado-pesto dressing in blender and blend until smooth.  Keep leftover dressing in refrigerator. Preheat a panini grill or flat grill. Spread each half of bread with pesto. Layer bottom halves with equal amounts chicken, onion, and cheese. Top with remaining bread halves, forming 4 sandwiches. Grill paninis 5 minutes in the preheated grill, or until bread is golden brown and cheese is melted.
