One of our most favorite summer salads is a fresh Cucumber Salad. It’s light, easy to make, and so very tasty that my kids often eat it before it can make it to the dinner table. Homegrown or store bought cucumbers – either way, it’s simply divine. I hope you are enjoying all the seasonal fruits and vegetables as much as I am because…Yikes!…it’s August already and the summer is rushing by way too quickly. But I’m thankful that it’s been a rewarding summer. I hope it’s been rewarding for you as well!

This weeks Summer Salad is Cucumber Salad…
Light and Refreshing Cucumber Salad
2 English cucumbers (2 pounds)
1 small red onion
1 1/2 tablespoons salt
1 tablespoon plus 1 teaspoon white wine vinegar or sherry vinegar
1 teaspoon sugar (optional)
2 teaspoons dried thyme/dill or 2 tablespoons fresh thyme or dill
Slice the cucumber lengthwise, remove the seeds, and slice thinly. Thinly slice the onion. In a colander, toss the cucumber and onion with the salt and let it sit and drain for 20 minutes. Press the liquid out of the vegetables and rinse well with cold water.
In a medium bowl combine the vinegar and sugar and stir well. Add the cucumber mixture and toss to coat. Stir in the thyme or dill.
