Here’s The Best Chicken Soup Recipe Ever…Yes, this soup has it all… and the secret ingredient is cumin which adds so much depth of flavor and a bit of heat.

My family loves when I make soup on cold nights and lately it’s been super cold outside! This soup recipe is kind of like a Mexican Fiesta Soup which is packed with flavor and so easy to make any night of the week. Also it is gluten and dairy free which is awesome for families with allergies. I used fresh parsley in this soup  but next time I would suggest cilantro whatever your preference is but both are in the same family so use what type you would like. I also love the fact I almost had everything on hand in the pantry.

Dinner so easy, it’s almost cheating! Mexican Fiesta Soup takes just minutes to throw together and is ready in under 30 minutes. Packed with flavor and filling ingredients like chicken, black beans, salsa and more. You’ll love it for a busy weeknight meal!  See this recipe made on video.

The Best Chicken Soup Recipe Ever

Ingredients

  1. 30 Ounces of Chicken Broth

  2. 2 Pounds of Chicken - Cooked

  3. 2 Carrots roughly chopped

  4. 2 Celery roughly chopped

  5. 1 Ginger 1 piece ginger finely chopped

  6. 15 ounces of Black Beans - Washed and Drained

  7. 10 Ounces of diced Tomatoes with Green Chiles drained

  8. 1 Can of Corn - Drained I used frozen corn

  9. 1 Tablespoon of Finely Chopped Parsley

  10. ½ tsp of paprika

  11. ¼ tsp of cumin

  12. ½ tsp of salt

  13. ½ tsp of pepper

  14. 1 TB of Olive Oil

Instructions

Sauté all vegetables in olive oil until softened. Add seasoning then chicken stock, add black beans, tomatoes, corn, cooked chicken, parsley.

Cover and set to low/medium and cook for 40 minutes
