My family loves when I make soup on cold nights and lately it’s been super cold outside! This soup recipe is kind of like a Mexican Fiesta Soup which is packed with flavor and so easy to make any night of the week. Also it is gluten and dairy free which is awesome for families with allergies. I used fresh parsley in this soup but next time I would suggest cilantro whatever your preference is but both are in the same family so use what type you would like. I also love the fact I almost had everything on hand in the pantry.

30 Ounces of Chicken Broth
2 Pounds of Chicken - Cooked
2 Carrots roughly chopped
2 Celery roughly chopped
1 Ginger 1 piece ginger finely chopped
15 ounces of Black Beans - Washed and Drained
10 Ounces of diced Tomatoes with Green Chiles drained
1 Can of Corn - Drained I used frozen corn
1 Tablespoon of Finely Chopped Parsley
½ tsp of paprika
¼ tsp of cumin
½ tsp of salt
½ tsp of pepper
1 TB of Olive Oil
Sauté all vegetables in olive oil until softened. Add seasoning then chicken stock, add black beans, tomatoes, corn, cooked chicken, parsley.
Cover and set to low/medium and cook for 40 minutes
