I absolutely love this Sweet Potato Goat Cheese Appetizer. They’re so good I have to make myself not eat too many! Sweet Potatoes make a great companion to your holiday meals as either mashed, candied, sweet or savory and can be enjoyed in recipes from breakfast to dessert too. But today, I’m sharing a way to make sweet potatoes as an easy appetizer. These rounds are the perfect bite-sized snack and are a bit on the healthier side so you don’t need to feel guilty having a few.

As I was making, I was thinking of some ways you could change them up a bit which of course I did. If you aren’t a fan of goat cheese, try replacing with regular cream cheese. Walnuts could replace the pecans and dried apricots could be used for the dried cranberries. For those that might want a bit of tanginess, try using a balsamic glaze drizzle. The rounds are your starters and just use your imagination to create your own version. For sure you will love the roasted sweet potatoes since they are the star of the show!

Once you have topped your rounds with the creamy goat cheese mixture, candied pecans and sweet apricots, be sure to give them a drizzle of honey. That provides a nice bit of sweetness.

Sweet Potato Goat Cheese Appetizer

Ingredients

  • 3-4 medium sweet potatoes peeled and cut into ½ slices. About 24

  • Olive oilsea salt

  • ½ teaspoon cinnamon

  • 4 oz goat cheese

  • 1 tbsp cream or half and half

  • 1 tbsp honey

  • ¼ cup chopped candied pecans

  • ¼ cup chopped dried apricots or cranberriesHoney for drizzling

  • Honey for drizzling

Directions

  • Preheat oven to 400 degrees
  • Combine the sugar and cinnamon and set aside
  • Brush each side of the rounds with olive oil and also sprinkle a bit of salt and the sugar-cinnamon on each side
  • Place one side down on a heavy cookie sheet
  • Bake for 15 minutes; turn and then bake for anothes 15 minutes
  • While baking combine the goat cheese with the cream (or half and half) and honey with a mixer
  • When rounds are done, let cool a bit then add about a tsp of goat cheese mixture on each round, sprinkle with pecans and craisins
  • Drizzle with a bit of honey and serve immediately
