Lately, it’s hard to shield ourselves from what’s going on in 2020, the news is just filled with everything from wall street, the coronavirus, to the Democratic primary elections.

I don’t consider myself a political person. I have my way – throughout my busy day – of staying in tune. With all the debates, whose not doing what…I tell you – it can be a bit too much. 🤦🏾‍♀️

So I had a thought. Since one of the biggest moments of the election is upon us – Super Tuesday, why not have some fun with it and have a “watch party”. Maybe not as big as our Super Bowl party, but something fun and interesting. If we’ve got to have it all over our tv’s then might as well enjoy.

So to keep in fun and light I decide to mash it up and combined Taco Tuesday with Super Tuesday and came up with Super Taco Tuesday for our neighborhood watch party for the Democratic primary election this Tuesday. You’ll know, I am a Taco Fanatic!

Super Tuesday is the election day early in a United States presidential primary season (February or March) when the greatest number of U.S. states hold primary elections and caucuses. More delegates to the presidential nominating conventions can be won on Super Tuesday than on any other single day.

My Turkey Tacos are the perfect dish to serve because it’s easy to prep and always a crowd favorite. I cook two or three pounds (depending on how many peeps) of turkey meat with my own taco seasoning and if you’re in a rush, I’m okay with you using your favorite taco seasoning packet too, but I find that for turkey tacos you just need something more to amp up the flavor, then make a bunch of your favorite taco shells.

Next, get out all the condiments that you love and let peeps build their own individual tacos with whatever ingredients they want from your little taco bar. I always have different assortments of cheeses expecially vegan cheese and almond cheese for my picky non-dairy peeps then it’s the usual suspects of lettuce, cilantro, onion, tomatoes, salsa, tomatilo sauce, guacamole, jalepenos, sour cream, slices of avocado, a squeeze of lime juice, and some fresh cilantro will add bright, fresh flavors to these tacos and any another assortment of hot sauces, our favorite hot sauce right now is Cholula! That’s it! 🤷🏽‍♀️

Ingredients

  • 2 teaspoons olive oil

  • 2 pound lean ground turkey

  • 2 tablespoons chili powder

  • 2 tablespoons paprika

  • 2 teaspoons cumin

  • 2 teaspoons ground coriander

  • 1 teaspoon salt

  • 1 cup water

  • ¼ teaspoon cayenne pepper

  • Condiments: lettuce, tomatoes, cheese, onions, jalapeños, salsa, guacamole, hot sauce, etc.

Directions

  • Heat the oil in a nonstick skillet over medium heat.
  • Add the ground turkey, to the skillet and brown the turkey, breaking it up as it cooks.
  • When turkey is cooked through, add the chili powder, paprika, cumin, coriander, salt, and cayenne pepper. Stir well to coat the meat.
  • Add the water and stir to combine.
  • Bring to a boil and then reduce heat to a simmer. Simmer for 10 minutes or until thickened.
  • Serve with tortillas or over a bed of lettuce with your favorite taco toppings
