Sunday’s Big Moms Breakfast!

Pancakes, Bacon, Egg and Cheesy Grits!

Some mornings you wake up and need to have a full service breakfast!

It’s not often that I make all this for breakfast but today is sunny and beautiful outside and I felt the need for the full slam breakfast.

4 tablespoons (1/2 stick) unsalted butter 1 cup whole, 2 percent or 1 percent fat milk 1 1/4 cups of flour 1 tablespoon sugar 4 teaspoons baking powder 3/4 teaspoon salt 2 eggs 6 ounces semisweet chocolate chips Butter, for cooking


In a small saucepan, combine the butter and milk. Place over low heat just until warm and the butter is melted.

Let cool slightly. In a bowl, combine the flour, sugar, baking powder and salt, mix well. In a large bowl, whisk the egg with a fork. Whisk in the milk mixture. Add the dry ingredients and mix just until barely blended. Add the chocolate chips and mix. (Lazy/shortcut version-use premixed pancake mix and chocolate chips.) Heat a griddle or large skillet over medium heat. Add about 1 teaspoon of butter and melt until bubbly. Ladle 3 tablespoons of batter for each pancake onto the hot surface and cook until bubbly on the top and golden brown on the bottom. Turn and cook until golden brown on the other side, about 30 seconds more. Repeat until all the batter is used up. Serve hot.

Cheesy Grits:


3 cups whole milk 1 teaspoon salt 1 cup instant grits 1 cup grated sharp white cheddar


Scald the milk with the salt in a saucepan over medium heat until little bubbles appear around the outside. Slowly whisk in the grits and continue whisking until the mixture barely simmers. Cook, whisking often, until very thick, about 5 to 6 minutes. Remove from the heat and stir in the cheese until melted and smooth. Serve immediately.

Bacon and Egg Directions:

Place 4 strips of bacon in frying pan and cook on each side for 4 mins.  Once bacon is done, remove and use the leftover grease from bacon to fry a few eggs.  Crack eggs into the frying pan, salt and pepper to taste. Once egg is done on one side flip it and fry the other side until done.
