Summer Pasta..

Who doesn’t need a super simple Summer Pasta Recipe? We all do! My simple pasta is one of my favorite summer dishes because my garden-fresh ingredients add a seasonal kick to our favorite comfort food. This relaxing easy Summer Pasta dish is a big hit with my family and friends. Basically, I throw in whatever I have in the kitchen and add ingredients from my garden or  whatever else I have on hand…I add a few packages of chicken sausage, a bag of sun-dried tomatoes, frozen edamame, onion, garlic, purple basil from my garden, crumbled goat cheese and I grab whatever dried pasta that I have on hand.  Bam, Summer Pasta it’s quick and easy to make a super duper delicious dish…

  1. Coarse salt and freshly ground pepper

  2. 1 pound pasta

  3. 8 ounces sweet Italian chicken sausage thinly sliced

  4. 2 tablespoons extra-virgin olive oil

  5. 2 garlic minced

  6. 1 onion finely chopped

  7. 1 to 3 jalapeno or Fresno chiles very thinly sliced crosswise

  8. 1/2 cup of sun-dried tomatoes thinly sliced

  9. 1 bag of frozen edamame

  10. 1 Bunch of fresh purple basil

  11. 1/2 cup of crumbled goat cheese

  12. Fresh basil leaves for serving


Bring a large pot of generously salted water to a boil. Add pasta and cook until al dente. Reserve 1 cup pasta water, and then drain pasta. Meanwhile, cook sausage in a large nonstick skillet over medium-high heat, until golden brown and cooked through, 5 to 7 minutes. Transfer sausage to a plate; drain fat from skillet. Add olive oil to skillet, scraping up browned bits with a wooden spoon. Add onions, garlic then add chiles and cook, stirring occasionally, 1 minute. Add edamame and continue cooking and chiles are softened, about 2 minutes add sun-dried tomatoes. Return thinly sliced sausage to pan along with pasta and toss to combine, adding enough pasta water to form a smooth sauce that coats pasta. Season with salt and pepper, and sliced basil leaves and goat cheese.
