Stuffed-Pepper Bites

After School Snack time is my delicious Stuffed-Peppers Bites!

Thank goodness it’s Friday! It’s been a long two weeks…so how is it that I’m still keeping my head above water? Is mercury in retrograde? Everything seems to be extra hard to get done. But they can’t keep a good woman down! So I’m fighting back like the warrior queen that I am. And honestly my kids don’t care about any of that because as soon as they get home it’s all about them and how hungry they are.

These Stuffed-Pepper Bites are a hit among my family and friends. Good for an afternoon snack, a cocktail party or just because they pack a lot of flavor. The mixture of organic beef, rice, garlic, lemon zest and parmesan cheese all in a bite size bell pepper is delightful!

Stuffed-Pepper Bites



  1. 1 pound ground meat

  2. 1 cup cooked (cooled rice)

  3. 1 teaspoon coarse salt

  4. 1 bag mini bell peppers

  5. 1 teaspoon minced garlic

  6. 1 teaspoon dried oregano

  7. 1 cup crumbled feta cheese

  8. 2 tablespoons chopped fresh flat-leaf parsley

  9. 1 teaspoon minced garlic

  10. 1 tablespoon finely grated lemon zest

  11. 1/2 teaspoon crushed red-pepper flakes (optional)

  12. 1/2 cup finely grated Parmesan cheese


  1. Mix ground meat with rice, salt, and a few flavorful ingredients. Spoon filling into each half of the mini bell peppers; then broil on a baking sheet on the center rack until meat is cooked, about 8 minutes.
