This flavorful Strawberry Chicken Salad is a perfect summer meal. Spinach, cucumbers, avocado, red onions and lots of fresh strawberries complement the chicken perfectly, and the dish gets extra citrus goodness from a homemade vinaigrette. Don’t save all of those sweet, ripe strawberries for dessert! They’re great in savory dishes, too.

It really is no secret at all that I love a good salad. It has helped me to keep a healthy diet and maintain my goals but at the moment I need to loose some additional weight. I’m on the 10 day salad challenge, one new salad a day. Of course I have to increase my workout so I can still enjoy a cocktail every once in a while, but healthy eating is key to me losing the additional pounds.

Strawberry Chicken Salad…
6 large strawberries (chopped)
½ cup cucumber slices
½ avocado (chopped)
¼ cup red onion slices
2 4 oz each grilled skinless,
boneless chicken breast halves
5 oz bag of spinach
¼ cup crumbled feta (optional)
½ cup fresh grapefruit or orange juice
1 Tablespoon maple syrup
½ teaspoon sea salt
¼ teaspoon ground pepper
1 teaspoon dijon mustard
1 clove garlic (minced)
1 teaspoon poppy seeds
2 Tablespoons olive oil
In a small bowl, whisk together all dressing
ingredients. Recipe will make a little less
than ¾ cup of dressing.
Prepare salads by dividing all ingredients in
half onto two plates. Start with a base of
spinach and top each plate with strawberries,
cucumber, avocado, onions, chicken and feta.
