Start the day off with a healthy Egg White Omelette

Egg White Omelette with Baby Spinach, Avocado and Goat Cheese is so good and the perfect breakfast! I know, I know you’ve heard it a million times that you should start your day off right with a healthy breakfast. I concur that breakfast is the most important meal of the day, but I too don’t always make it the highlight of my cooking regime. Just like most of us I’m rushing out the door in the morning but I do make sure that we all have a hearty and healthy breakfast to get our minds and bodies ready for the day. In honor of a great breakfast you don’t have to sacrifice on taste to stay on track with healthy eating! This simple but delicious Egg White Omelette has it all. I buy Trader Joe’s 100% cage-free Egg Whites and add all the healthy fixing that are left over in my refrigerator.  In this version I added some of my favorites; spinach, avocado, onions, garlic and goat cheese – all healthy and yummy!

Egg White Omelette with Baby Spinach, Avocado and Goat Cheese

  1. 3 egg whites

  2. ½ yellow onion or red onion finely chopped

  3. 1 tsp of fresh garlic finely chopped

  4. ¼ tsp sea salt and pepper to taste

  5. ¾ cup chopped fresh baby spinach

  6. 2 oz goat cheese crumbled

  7. ½ avocado diced


Coat a small nonstick skillet with cooking spray.

Heat the skillet on medium to low heat.

Add onion, garlic and chopped spinach.

As it wilts, pour egg white mixture over the vegetables and allow to set around the edges.

As the edges set, lift them gently with a spatula and tip the skillet to allow remaining liquid to flow underneath.

When the egg whites are set, sprinkle the cheese on top, then fold the omelette in half.

Serve immediately.
