I love this Spring Green Onion Soup recipe. For me, green onions taste like Spring – fresh, invigorating and filled with sunshine! It is good to know that they have lots of immune enhancing compounds to boost our good health as well. This Spring Green Onion Soup recipe only has 4 ingredients: green onions, garlic, ginger and vegetable stock seasoned with salt and pepper. I came up with this one day when I cleaned out my vegetable garden. Ready to replant, all that remained in my garden was an abundance of over-grown spring green onions and I didn’t want them to go to waste. I am on a mission to not waste anything in my household, so I put the green onions to good use. This dish is now one of my family’s favorite soup recipes, hands down. It’s cheap to make, easy to execute and always satisfying!
Springtime is here! That’s right and it’s time to start replanting my vegetable garden! I’m know as a “Garducer” around here. “What’s a ‘Garducer’?” you ask. It’s a garden producer; that’s the name my husband gave me since I direct everyone else on what to plant in my garden without getting dirty! LOL! That’s not completely accurate but I have to admit there is some truth to it!

Spring Green Onion Soup...

2 tablespoons extra-virgin olive oil
1 tablespoon of coconut oil optional
12 bunches scallions finely chopped
5 garlic pieces minced
1/2 inch ginger peeled and chopped
Salt and freshly-ground black pepper to taste
5 cups vegetable broth
In a heavy-bottomed soup pot, add olive oil and coconut oil then add the green onions, garlic, ginger. Sauté for a few minutes, until the onions are softened, then add broth and bring the mixture to a boil. Reduce heat, cover, and allow to simmer for 10 minutes. Add salt and pepper to taste. Puree with hand-held blender until smooth, and heat gently (do not boil). Garnish with chopped green onions. Serve warm.
