The Luck of the Irish!
St. Patrick’s Day is quickly approaching and since my husband is half Irish we will be celebrating St. Patrick’s Day in style with yummy foods like Corn Beef and Cabbage and ice cold beer to chase it all down. But until then, I’ll be making yummy dishes all weekend with the power of green in honor of the holiday. This very green Spinach Pasta with Pesto Sauce is both fulfilling and scrumptious. Let’s get this green thing going in honor of St. Patrick’s Day.

Spinach Stuffed Pasta with Pesto Sauce Recipe:
1 cup baby spinach
3 cloves of garlic
1/4 cup walnuts
1/4 cup olive oil
1/2 cup grated Grana Padano cheese (or Parmigiano-Reggiano)
2 (9 ounce) packages spinach stuffed pasta
Salt and pepper to taste
Place the spinach in a food processor with the garlic, walnuts and cheese and pulse until coarsely chopped. Add the olive oil and blend until smooth and creamy. Add salt and pepper and mix until just combined; set aside.
Make the pasta according to the package directions. Drain the pasta and separate between the four dishes. Spoon the pesto over the pasta, sprinkle with leftover cheese and serve.
