Thank God it’s Friday! Let me tell you, I really need this refreshing Spicy Raspberry Vodka Cocktail! It’s been a unbelievable crazy last two months and I’ve been challenged on every level I can imagine. But, one thing I do know about myself is that I’m a fighter and a survivor! As the saying goes… “what doesn’t kill you makes you stronger” is an appropriate statement for my personal position at the moment. I’m still moving through the thick fog but I believe that I feel clearing just ahead, hopefully! Anyway a great cocktail always makes me feel better! Lol!
This year, hot, and spicy, is in, like this red bell pepper mixed with raspberries as in this Spicy Raspberry Cocktail. Our very good friend from Paris, Mathieu and his beautiful girlfriend Aude came to visit us and she made these delicious concoctions, that I’m now obsessed with. I love the combination of spicy, hot and vodka, what’s not to love, it’s simple flavors the taste amazingly! The perfect chilled drink to cool you down and get you through the week. Did someone say Happy Hour?

Spicy Raspberry Vodka Cocktail...

3 to 4 ounces vodka
2 limes juiced
3 pints fresh raspberries rinsed
1 large red bell pepper chopped
Throw the raspberries and chopped bell pepper into a blender or food processor and blend until completely smooth. Pour the mixture into a fine mesh strainer, placed over a peel, to remove the raspberry seeds. Discard the seeds. Pour the raspberry/bell pepper mixture into a large pitcher and stir. Stir in the vodka and juice of the lime. Garnish with the slice of a lime and raspberry.
