Sparkling Pomegranate Cocktail:
It’s December my friends and I need to get in high gear for Christmas! I had planned on relaxing this past weekend before I kicked into full swing with my preparations but I forgot that we promised the kids we would attend the LA Auto Show. We braved the crowd on Saturday afternoon looking at all the fancy new cars but I have to say not one car impressed me. Why can’t they come up with a cute, small SUV that gets 30 mph in the city and is safe? Tyson and I attended a fantastic holiday celebration and we partied way too hard…until 3 am. I woke up on Sunday and decided it was time to start our Christmas celebrating and decorating! To get the festivities rolling, I made a simple but tasty “Sparkling Pomegranate Cocktail.” This cocktail is perfect for the holiday season and I love getting a blast of crunchy but sweet juice from the pomegranate seeds as they float around in the cocktail. Yum Yum!

Recipe for Sparkling Pomegranate Cocktail:
1 1/2 cups pomegranate juice
1/4 cup cointreau
1 (750-milliliter) bottle Prosecco or dry sparkling wine, chilled
6 lime slices (optional)
Pomegranate seeds (optional)
Combine pomegranate juice and 1/4 cup cointreau and squeeze of lime in a 2-cup glass measure. Divide the juice mixture evenly among 6 Champagne flutes or wineglasses. Top each serving evenly with wine, and garnish each serving with pomegranate seeds.
