Spaghetti with Shrimp, Tomatoes, Broccoli and Basil

Spaghetti with Shrimp, Tomatoes, Broccoli and Basil is one of my all time favorite summertime dinner meals!  I love to add all the delicious ingredients together like a mad science project and breathe in the aroma of garlic and olive oil. It makes me feel like I’m a real authentic Italian cook! Ha! This Spaghetti with Shrimp, Tomatoes, Broccoli and Basil recipe is an easy and fun dish to throw together and I bet if I were competing in a cook-off, I’d be in the running to win from my cooking enthusiasm alone. I get intoxicated by the smell of tomatoes and garlic as they sauté together while the sauce is cooking and then toss in all the fresh herbs of basil, thyme and parsley with shrimp…and one of my favorite vegetables: broccoli. Yum Yum!

Is it just me or does it seem like summer is flying by? I’ve been having a very chilled out summer and the kids have been busy with camp and going to work with Dad! Yea! I’m getting a lot done but somehow it’s already time to start shopping for back to school stuff! How is this possible? Yikes!

Spaghetti with Shrimp,Tomatoes, Broccoli and Basil…

Light and easy Spaghetti with Shrimp, Tomatoes, Broccoli and Basil

  1. 1 pound spaghetti or linguine

  2. salt

  3. 3 Tbsp. extra-virgin olive oil

  4. 1/2 teaspoon crushed red pepper flakes

  5. 1 bag/medium shrimp (frozen and thawed)

  6. 1 bag/pound broccoli (ends trimmed, cut in 1 inch pieces)

  7. 3 large garlic clove (minced)

  8. 3 pints small cherry tomatoes or grape tomatoes

  9. 1/2 cup kalmata olives (halved, pitted (optional))

  10. freshly ground black pepper

  11. 1/2 cup grated fresh Parmesan cheese

  12. 1/2 cup fresh basil leaves (chopped)

  13. 2 Tbsp. fresh parsley (chopped)

  14. 2 Tbsp. fresh thyme leaves (chopped)

  15. Extra chopped basil and grated Parmesan cheese for serving

  1. Bring a large pot of salted water to a boil. Add spaghetti and cook until al dente. Drain and return to pot.

  2. While the pasta is cooking, heat one tablespoon olive oil with 1/2 teaspoon chili pepper flakes in a skillet. Add shrimp in one layer. Cook until pink on both sides and just cooked through, 2-3 minutes. Transfer shrimp to a plate.

  3. Add one tablespoon olive oil to same skillet. Add broccoli and sprinkle with one teaspoon salt and a pinch of red pepper flakes. Sauté until crisp tender. Transfer broccoli to another plate.

  4. Add one tablespoon olive oil to skillet. Add garlic and sauté until fragrant, 30 seconds. Add tomatoes and olives(optional) one teaspoon salt and one teaspoon black pepper and herbs (parsley, thyme, basil). Simmer 7 minutes, breaking tomatoes apart with a spoon. Return shrimp and broccoli to skillet and toss to combine.

  5. Remove from heat. Add to spaghetti. Add cheese, additional basil and toss to combine. Serve with extra Parmesan cheese.
