Here’s one of my all time family’s favorite breakfast recipe Skillet-Poached Huevos Rancheros! So easy to make and absolute yummy! All the ingredients you need are black beans, salsa, eggs, cilantro, avocado and lime juice.
It’s also one of my Instarecipes. These are meals that I make on the go and post on Instagram. I like to cook the recipes and often go back and remake them, so they can be cooked an easier way for me – and you! These posts will be short & sweet! This is one of them!

Our weekend mornings often start off slow around here with breakfast sometimes morphing into the lunch hour. By the time we’ve gotten around to it, it’s already noon and we’re starving. This tasty Huevos Rancheros is loaded with complex carbohydrates, protein, and healthy fats, making it a balanced meal that’s also teeming with antioxidants. Make some for lunch or enjoy it first thing in the morning as a decadent breakfast meal.

Skillet-Poached Huevos Rancheros
Simple and Easy Skillet-Poached Huevos Rancheros
1 16- ounce jar salsa (2 cups)
1 15.5- ounce can black beans (rinsed)
4 large eggs kosher salt and black pepper
2 scallions (sliced (optional))
1 jalapeño (sliced)
1/4 cup chopped fresh cilantro
1 avocado (sliced (optional))
4 small flour tortillas (warmed)
In a large skillet, combine the salsa and beans and bring to a simmer.
Make 4 wells in the bean mixture. Crack each egg into a small bowl and slide it gently into a well. Season with ½ teaspoon salt and ¼ teaspoon pepper.
Then add your toppings: sliced avocado,chopped jalapeños,scallions,cheese or all of them!
