Seafood Pasta with Broccoli:
Monday is back to the rat race. Getting up at the crack of dawn, cooking the kids breakfast, making lunches…and all before 7:30am! Then after dropping the kids off at school I gotta hit Barry’s Bootcamp by 8:30am and get a hard workout in. I over indulged myself this weekend and need to get back to being disciplined. Every now and then we all have to indulge ourselves but I have vowed not to get off track this year!
My Seafood Pasta with Broccoli dish is a perfect dinner that’s flavorful, hearty and keeps you on track as a healthy dish!
It’s back on track Monday!

2 cups uncooked fettuccine 1/4 cup chopped onion 3 garlic cloves, minced 1 tablespoon butter 1 tablespoon olive oil 2 cups fresh broccoli florets 1/4 teaspoons salt 8 ounces uncooked frozen seafood blend (Trader Joe’s) 1/4 cup grated Parmesan cheese
Cook pasta according to package directions.
In a large nonstick skillet, saute onion and garlic in butter and oil until tender. Add broccoli and salt; cook and stir over medium-high heat for 8 minutes. Add shrimp; cook and stir 2-3 minutes longer or until shrimp turn pink and broccoli is tender.
Drain pasta; transfer to a large serving bowl. Add the broccoli mixture; toss gently.
