Scallion Garlic Pasta with Peas and Mint

Who doesn’t love pasta? Everyone I know loves a good and tasty pasta. I found this version of a pasta recipe in Food & Wine Magazine called Garganelli with Speck, Peas and Scallion Cream and I came up with my own simplified variation which I’m calling Scallion Garlic Pasta with Peas and Mint.  You know me, that’s what I do here at Ali in the Valley, simplify recipes for us!

This pasta dish punches a lot of flavor and when I want to wow guests,  I make this dish because it’s an ideal pasta that satisfies most and if they don’t eat meat, don’t add the prosciutto.  The  mixture of butter, sweat peas, prosciutto, lemon zest and mint with pasta and cheese is just a winner, hands down!

This recipe was so good that I made it a few times.. But instead of penne pasta, I used bow tie pasta.

So here’s to something new and delicious and once you’ve made this dish, please tag me on your social media #aliinthevalley.
