Sauteed Chicken with Nectarines, Plums and Kale:
Something New! This weekend was restful and I needed it and when I get my rest…I get creative. I came up with this on the fly because I needed something healthy and fast to feed the family. I had organic chicken in the refrigerator and seasonal fruit from the Farmers Market so I mixed it all together to make a kicking summer dish. This recipe will be added to my repertoire for now on! 1 1/2 lbs boneless skinless chicken breast (pounded flat) 1 yellow onion, thinly sliced 3 tbsp extra virgin olive oil 1 bag or bunch of kale, roughly chopped 4 nectarines and 2 plums, cut in wedges 4 oz feta cheese, crumbled 1 tbsp red wine vinegar 1 clove garlic, crushed 1 pinch of cayenne 1 tbsp parsley, chopped
Season chicken with salt and pepper on all sides. In a large skillet, saute the chicken in the oil over medium heat.
Cook for about 10 minutes turning once, until chicken is no longer pink inside. Add sliced onions, garlic and sliced nectarines and plums. Continue to cook, sautéing the onions and fruit for 5 minutes until they soften. Add 1 bag or bunch of Kale on top of the chicken and fruit and cover with top for another 3 to 5 minutes. Once Kale is cooked, drizzle with olive oil, red wine vinegar, season with salt and pepper and sprinkle crumbled feta cheese and chopped parsley.
