Roasted Brussels Sprouts…


I have a confession to make, I didn’t like Brussels Sprouts or Roasted Brussels Sprouts when I was a kid but now I’m obsessed with them and so is my entire family, kids included! That’s right, train them young and it will be a lifestyle. We eat Brussels Sprouts all the time, not just for the holidays and now you can find them pre-washed and packed at Trader Joe’s which makes it easier to add to my weekly vegetable shopping list. I’m always on the hunt for new recipes but this simple delicious Roasted Brussels Sprouts recipe is my go to recipe for tasty, crunchy, flavorful Brussels Sprouts. I add lemon zest, the juice of a lemon, garlic, salt, pepper, olive oil and “BAM”! Mouth watering Brussels Sprouts!

Roasted Brussels Sprouts...

Ingredients

  1. 1 lb. Brussels sprouts trimmed and halved (quartered if large)

  2. 1 lemon zested and juiced

  3. 1 garlic clove minced

  4. 1/2 tablespoon extra-virgin olive oil

Instructions

Preheat oven to 450°F.

Toss together Brussels sprouts, lemon zest, lemon juice, garlic, oil, and salt and pepper to taste in an 11- by 7-inch baking pan and spread in 1 layer.

Roast in upper third of oven, stirring once halfway through roasting, until sprouts are brown on edges and tender, about 25 minutes total. Serve warm.
