Yep! I’ve been swamped but here’s a quick and easy Rice Salad with Tuna and Capers recipe that has all of the right flavors! The yummy, tangy and salty mixture of flavors in this salad will wake up all of your taste buds in just one bite. I love serving this salad at a quick lunch meeting and surprising everyone with something new. If you’re a salt person, this salad is a must try.

Rice Salad with Tuna and Capers...

4 cups water
2 cups rice white or brown
2 cans tuna preferably olive oil packed
1/4 cup fresh lemon juice or white wine vinegar
1/4 cup extra-virgin olive oil
1 1/2 tablespoon capers rinsed
1/2 cup chopped fresh flat-leaf parsley
1/2 cup chopped fresh basil plus whole
leaves for garnish
1/2 cup chopped fresh cilantro
Salt and pepper
In a saucepan over high heat, combine the water and 1/2 teaspoon salt and bring to a boil. Add the rice, bring back to a boil, reduce heat to low, cover and cook until rice is tender and the liquid is absorbed, about 20 minutes. Remove from heat and let stand, covered, until completely cool, at least 1 hour. Separate grains with a fork.
Drain the tuna of excess oil, place in bowl, and then flake it with a fork. In a large bowl, stir together the lemon juice, olive oil, 1 teaspoon salt and 1 teaspoon pepper. Add the rice, tuna, capers, parsley, chopped basil, cilantro and mix gently.
Garnish with whole basil leaves.
