Pesto Pizza with Tomatoes and Pancetta:
It’s been a very long and thought provocative week for me. I have a lot projects on my plate and I’m desperately trying to get them all done. I’m an overachiever and take on way more than I should, but really I don’t know any other way! It drives everyone around me crazy, but I haven’t changed since I was a kid. Tackling 100 things and getting them done is my way! If I have only a few things to do I go crazy and I’m ready to go sit on a shrinks couch to figure out what’s wrong with me! In times when I’m too hard on myself for not getting all the 100 things done, I reward myself with yummy food! Is this emotional eating? Maybe, but today my kids are having friends over and instead ordering pizza, I’m going to teach our friends how to make homemade pizza.
I love making homemade pizzas and so do my kids. We always make the standard pizza with pepperoni but I let the kids get creative and make all kids of different combinations. It’s so much fun and the kids love to put their own ingredients on their pizzas. I love the fact that homemade pizzas done right are usually much healthier. Shh! Don’t let my kids know!

Pesto Pizza with Tomatoes and Pancetta Serves 4
pizza dough 1/2 cup pesto 2 ounces pancetta, cubed 2 tomatoes (I use 1 roma and 1 orange), seeded and sliced into strips 3/4 cup shredded mozzarella or goat cheese
Prepare pizza dough or crust on stone with cornmeal, or as directed. Preheat oven as appropriate for the dough you choose.
Cook pancetta in skillet over medium heat until crispy. Drain on paper towels.
Spread pesto on prepared pizza dough.
Sprinkle pancetta on pesto. Arrange tomato slices on pizza. Top with mozzarella. Bake according to directions for pizza dough.
