Pasta with Sausage and Broccoli:
It’s been a very busy and productive week. I feel like I’m moving at the speed of light with no signs of slowing down. I like it because I’m getting things done! Yea! I’m accomplishing the goals I set out to do for 2013 and it’s really feeling good! “Accomplished”… and can you believe this word is on my daughter’s 1st grade spelling test today? Yikes! What are they trying to do to our children? All work and no play makes you go crazy. I better listen to my own advice and slow down a little. It’s just that I’m so excited with all that’s on the horizon. Stay tuned for some new events!
Since I have been really crazy busy, I had to adapt my cooking game plan this week to an even faster and easier meal schedule for my gang. Basically, making something out of nothing…or with whatever was available in my refrigerator. This quick Pasta with Sausage and Broccoli dish has all the flavors of a classic Italian dish created entirely from what I had on hand. The leftover sausage from the Farmer’s Market, broccoli, canned tomatoes, garlic, onions and whatever else I could find that I didn’t want to go bad. So delicious and so easy.
Remember, even when it seems difficult to stay focused on your goals – take a break and then get back on track.

Recipe for Pasta with Sausage and Broccoli:
1/2 pound rigatoni (1⁄2 box)
1 bunch broccoli, cut into florets
1 small maui onion, sliced
3 tablespoons olive oil
Kosher salt and black pepper
1 pound Italian sausage links, casings removed and meat broken into 1-inch pieces
2 cloves of garlic(minced)
1/4 cup grated Parmesan (1 ounce)
Cook pasta according to directions. Meanwhile in a good heavy skillet, saute the sausage, broccoli and onion for 5-6 minutes or until broccoli is crisp-tender. Add the tomatoes, basil and parsley. Cover and simmer for 10 minutes. Drain pasta; stir into the sausage mixture. Salt and pepper to taste and sprinkle with Parmesan cheese just before serving.
