Have you seen beautiful Purple Cauliflower, yet ? Easy Oven Roasted Purple Cauliflower is gorgeous to look at and tastes like heaven! Recently I was strolling through the grocery store and was on the hunt for some new and exciting veggies, when I saw a gorgeous bright purple head of cauliflower. I decided to take one of these vivid colored cauliflowers home and oven roast it with garlic, olive oil, sea salt, pepper with a little lemon juice. Oh yeah, this beautiful purple vegetable dish delighted my children and was the topic of our conversation all thru dinner. So here are the answers I gave my kids about this new exciting vegetable.
Where does the color come from? No, they’re not painted or dyed! Purple cauliflower gets its beautiful hue, which can vary from pale to jewel-toned, from the presence of the antioxidant anthocyanin, which is also found in red cabbage and red wine.
What does it taste like? Colored cauliflower holds the same firmness, crumbly florets, and texture as its white counterpart, with subtle differences in taste but purple cauliflower is mild and slightly sweet with nutty nuances.
Where to buy colored cauliflower? Your best bet is to check out your local farmers market, though you may also have luck finding orange and purple cauliflower in stores like Whole Foods. I got mine from my local Whole Foods.

Oven Roasted Purple Cauliflower

1 head purple cauliflower cut into florets
1-2 Tbsp olive oil
6 cloves of garlic minced
sea salt to taste
coarse black pepper
fresh lemon juice optional
Preheat oven to 450 degrees F. Line baking sheet with parchment party or aluminum foil. Toss cut cauliflower in olive oil. Make sure to coat entire surface of vegetable. Spread cauliflower into a single layer on prepared baking sheet. Do not over crowd pan, allow ample space. The add minced garlic on top. Generously season with salt and pepper. Bake for 15-20 minutes until edges and flat areas of cauliflower have browned. Cook time may vary depending on size of your florets. Serve warm and garnish with fresh lemon juice.
