Mixed Vegetable Salad…


Here’s my Mixed Vegetable Salad recipe! I found a new product at Trader Joe’s called Cruciferous Crunch Collection which includes veggies such as broccoli, cauliflower, radishes, brussel sprouts, and cabbage, as well as less common ones like collards, arugula, chard, mustard greens, rapini, and many more greens. Cruciferous vegetables are high in vitamin C and soluble fiber, containing nutrients with proven cancer-fighting properties.

It is my new go to bag for a quick, lazy girl salad! It is really cheap at $1.99 per bag, which can feed my family of 4 as a side salad or 2 people for a large lunch salad! Listen, when I don’t have time I just mix a quick and easy dressing (spicy mustard, apple cider vinegar, minced garlic, honey, extra virgin olive oil and salt and pepper) and toss with the salad…LOL! Yep!

Vegetable Salad...

Ingredients

  1. 1 Bag of Cruciferous Crunch Vegetarian

  2. Dressing:

  3. 3 Tbsp apple cider vinegar

  4. 2 tsp lemon juice

  5. 1 Tbsp spicy mustard

  6. 1 Tbsp honey

  7. 2 cloves of garlic minced

  8. 1 ½ Tbsp extra virgin olive oil

  9. 1/8 tsp unrefined salt

  10. ¼ tsp of pepper

Instructions

Mix dressing in bowl then add vegetables and mix well!
