Meatless Monday…Roasted Cabbage


I love Cabbage! This easy and tasty Roasted Cabbage goes down on my list as one of the best vegetable side dishes of all time. I know that not everyone loves Cabbage, but love it or not this delicious, savory and crunchy cabbage just might win over the pickiest of food peeps…and it’s as simple as 1,2,3. The thinly sliced cabbage combined with minced garlic, salt, pepper and olive oil roasted together in the oven comes out perfect every time!  Sometimes, life can be as simple as 1, 2, 3.

We made progress this weekend with getting the house decorated and the Christmas lights up outside.  Next up is buying our tree!  It’s never a dull moment here in my household, especially with the Christmas holiday quickly approaching. I’m seriously trying to stay on a food regime so I don’t over eat during the holidays! Yikes, it’s not easy! But stick with me on Meatless Mondays and we’ll navigate the season together…all while staying healthy!

Roasted Cabbage

Roasted Cabbage

Ingredients

  1. 1 tablespoon plus 2 more tablespoons extra-virgin olive oil or spray

  2. 1 medium head green cabbage cut into 1-inch-thick rounds

  3. 1 head of garlic minced

  4. Corse salt and ground pepper

Instructions

Preheat oven to 400 degrees. Brush a rimmed baking sheet with 1 tablespoon extra-virgin olive oil.

Place 1 medium head green cabbage, cut into 1-inch-thick rounds, in a single layer on sheet and brush with 2 tablespoons oil. Season with coarse salt and ground pepper and sprinkle with minced garlic.

Roast until cabbage is tender and edges are golden, 40 to 45 minutes.
