Meatless Monday…Dr. Oz’s Vegetable Broth Soup


Meatless Monday showcases Dr. Oz’s Vegetable Broth Soup which is slimming, delicious and full of yummy veggies! This weekend my hubby and I decided to do the Dr. Oz’s 48 Hour Weekend Cleanse for detoxing. We loved it! Every now and then it’s great to jump start your food regime with a cleanse. We’ve done the “Lemonade” Diet, but ever since becoming a Mom, I can’t seem to do the “no eating” thing…and I don’t think I can drink that spicy lemonade ever again! Maybe if there was vodka in the lemonade I could handle it. LOL! But Dr. Oz’s 48 hour cleanse was easy to handle and was filled with healthy, yummy vegetables that we consumed all weekend. If you’re looking for a cleanse to start the year off right, give this one a try…it’s a good one.

Vegetable Broth Soup

Servings: 5

Ingredients

  1. 2 red onions roughly chopped

  2. 2 stalks celery roughly chopped

  3. 1 fennel bulb fronds and stalks included, roughly chopped

  4. 2 tsp caraway seeds

  5. 2 tsp sea salt

  6. Freshly ground pepper

  7. 1 cup sliced shitake caps

  8. 4 large cloves garlic chopped

  9. 1 cabbage roughly chopped

  10. 2 quarts water

  11. 2 tbsp paprika

  12. 2 tbsp fresh oregano chopped

  13. 8 sprigs parsley chopped stems and leaves

  14. 1/2 cup parsley chopped

Instructions

Combine all ingredients, except for the chopped parsley, in a pot. Add 2 quarts of water. Bring to a boil and then reduce heat. Simmer covered for about 1 hour. Adjust seasoning. Remove whole parsley sprigs and serve topped with some freshly chopped parsley. Serve with a side of traditionally fermented sauerkraut and chopped apples (warm or room temperature).
