Low Fat Seafood Stir Fry

Seafood Stir Fry:

It’s been a busy week but I’m feeling good! I’m reaping the benefits of being consistent with my workout program and eating healthy. I partied hard for my birthday at my favorite restaurant Mr. Chows but then I got right back on the grind with healthy food immediately. If you haven’t been to Mr. Chows, treat yourself to a fun night of dinner and drinks with the best chicken satay, squab with lettuce cups, lobster, seaweed, white fish, filet mignon and cosmopolitans in town.  Chris the Maitre d’ is the best in town and the service is over the top…but don’t look at the bill and watch out for the crazy paparazzi that’s there looking for stars. It’s a fun night of great food and lots of laughter!

After a fun night of gourmet chinese food at Mr. Chows, I decided to make the kids my low fat version of Seafood Stir Fry!  What I love about this simple recipe is that it’s cooked in one wok! Quick and low fat right on time!

Low Fat Stir Fry surprise with shrimp and squid: Minutes to Prepare: 20 Minutes to Cook: 10 Number of Servings: 4        Amount Per Serving Calories: 277.2

Ingredients:

3 cups cooked brown rice 16 oz squid and shrimp frozen bag (Seafood Mix from Trader Joes) 1/2 cup broccoli (cut up) 1/2 cup edamame (frozen) 1 bell pepper thinly sliced 1/2 cup red onions, sliced 2 garlic cloves (minced) 2 tbsp of extra-virgin olive oil 2 tbsp soy sauce (or to taste) 1 tsp chili pepper flakes 1 juice of lime salt and pepper

Directions:

Begin by cooking the rice so it is ready by the time the stir fry is done. In a wok or large pan heat the oil over medium high heat. Add red onions, garlic and chili pepper flakes, cook for 2 mins. Add broccoli, sliced bell pepper and edamame, cook 5 mins. Add the seafood mixture and stir fry until done, about 5 minutes. Add fresh lime juice and a splash of soy sauce. Stir fry until seafood and vegetable are completely cooked. Add salt and pepper to taste.

Serve with rice.
