Lemony Pork Chops:

I’m in need of a good relaxing weekend before I start next week with my Christmas rush of decorating, shopping, planning, gift giving, blogging and partying. Yes, it’s that special time of year where every weekend is reason to celebrate! To add to the excitement and festivities, it’s also my brother, father and mother’s birthdays and…did I mention the kids start their winter break on the 17th! Never a dual moment at the Kilmer household and I want to plan memorable activities that the kids will enjoy during their break from school. On my list are whale watching, viewing the space shuttle, exploring museums, lots of giggles and hugs, go-carting, roller skating, ice skating, visiting the snow for snow boarding and even a trip to the beach or whatever else they’d like to do. We might even attempt a last minute road trip to Arizona – now that’s a little ambitious, right?!

This weekend I’m enjoying the calm before the madness! During the winter months I’m always ready to eat foods a little bit more hardy so tonight I’m making my simply delicious Lemony Pork Chops. These chops are a huge hit with my clan so I have to make a double batch because everyone wants more. The juice of the lemon keeps the pork chops nice and moist. Recipe for Lemony Pork Chops:

Ingredients:

  1. 1 lemon juiced and zested

  2. 1/2 cup of white wine

  3. 1 garlic clove, minced

  4. Coarse salt and ground pepper

  5. 2 tablespoons olive oil

  6. 4 thinly cut loin pork chops

Directions:

Zest lemon and juice; combine in a small bowl with garlic, 1/2 teaspoon salt and 1/4 teaspoon pepper. Set aside. Heat oil in a large skillet over high heat. Season pork chops on both sides with salt and pepper. Add olive oil and cook chops in skillet until browned, 2 to 3 minutes per side. Add 1/2 cup white wine to skillet; bring to a boil. Reduce heat to medium-low; cover, and simmer gently until pork is cooked through, 8 to 10 minutes. Add lemon-garlic mixture to the top of the chops and serve.
