So look no further than this simple sautéed Kale and Red Onion Salad which can be a served as a quick warm salad for lunch or used as a great side-dish to meat, chicken or fish.
Kale is one of the healthiest vegetables on the planet and provides significant health benefits, including cancer protection and lowered cholesterol. I grow my own Kale, 0r sometimes I will buy Kale in a pre-washed bag from Trader Joe’s, I juice with kale, I make kale chips etc. But, this sautéed Kale and Red Onion Salad recipe stands out as one of my all time favorite Kale Salad recipe. The mixture of sautéed red onions, cherry tomatoes, kale tossed with red wine vinegar, extra-virgin olive oil, salt, pepper topped with a little shaved asiago cheese melts in your mouth and satisfies the most discerning palate.

Kale and Red Onion Salad…
1 bag of kale (Trader Joe's)
2 tablespoons extra-virgin olive oil (plus more for brushing)
2 medium red onions (sliced crosswise 1/2 inch thick)
1 container cherry tomatoes (cut into halves)
2 1/2 tablespoons red wine vinegar
2 tbs. of Asiago cheese for garnish
In medium size sauté pan, add olive oil let it warm up but not smoke then add onions cook for 4 minutes, add cherry tomatoes and kale, season with salt and pepper. Cook over moderately high heat, turning once, add the vinegar and generous pinch of salt and pepper cook until all is slightly wilted down but not over cooked about 7 minutes.
Garnish with shaved asaigo cheese and serve right away.
