Avocado & Mango Smoothie:
Here in my household, one of the ways we’re celebrating Earth Day is going meatless and adding lots of green in our meal plan. Yes, that’s right…no meat! Actually it’s not so hard for us and we do it so often my kids don’t even realize that they hadn’t had any meat all day.
Here are two green recipes you can add to your diet that are healthy, delicious and meatless. Trust me, your kids will enjoy this thick, sweet and fulfilling Avocado Smoothie as well as this hearty and savory Broccoli Soup! Try it and tell me what you think.

Avocado and Mango Smoothie:
Recipe for Avocado and Mango Smoothie:
2 teaspoons fresh lime juice
1 ripe avocado – halved, pitted and peeled
1 mango, cut & cubed
2 tablespoons chopped fresh mint leaves
In a blender, puree all ingredients and serve in a chilled glass with a lime wedge as a garnish.
Broccoli Soup Recipe:
6 tablespoons extra-virgin olive oil
2 pounds fresh broccoli, stems and florets separated and chopped into bite-size pieces
1 large onion, chopped
2 garlic cloves, minced
1 teaspoon chopped fresh tarragon or 1/2 teaspoon dried
6 1/2 cups chicken stock or canned low-salt chicken broth
salt and pepper to taste
Saute chopped onions with olive oil for 5 minutes until translucent. Add broccoli florets, stems, garlic and tarragon and sauté for 1 minute. Add stock, bring to boil. Simmer uncovered until broccoli is tender, about 15 minutes.
Use an immersion blender to blend the soup until smooth. (If you use an upright blender, work in small batches, fill no more than a third of the blender bowl at a time, and hold down the lid while blending.) Season with salt and pepper to taste.
Garnish with broccoli florets and cayenne pepper.
