I love Homemade Potato Chips…
Instead of ripping open a store bought bag of potato chips I decided to treat my family to my yummy, healthier homemade potato chips. I made two kinds: sweet potato and yukon potato chips. This is an easy and simple recipe that you can whip up in 30 minutes. You can also use this recipe with beets, yams, onions, eggplant and any other veggie.

Extra-virgin olive oil for frying
2 potatoes and 2 sweet potatoes thinly sliced
In a large heavy saucepan, fill oil no more than halfway and heat to 350 degrees F.
Add the potato slices in batches. Fry until light golden brown, about 2 to 3 minutes. Drain on paper towels, season with salt and serve.
