Chicken Soup is good and great comfort food. But today, I’m giving myself a pat on the back for this one. Not only it is healthy, but it’s also filled with ingredients that have healing properties, super flavorful and dare I say comforting and we all need some comfort! It’s crazy times right now! 🥺

What makes this Ginger Chicken Soup healing? 

After the last few weeks, this healing soup is definitely needed. And yes these days are very challenging with the Coronavirus growing faster and faster. It’s a necessity that we eat to protect our bodies. We need to become diligent with eating food that keeps us healthy! Let’s fight to stay healthy and alive!

Ginger is an effective antibacterial and antiviral when fresh that can help your body fight off cold and flu viruses.

Garlic can help prevent illness while also shortening the duration of any cold or flu. You can up the garlic benefits by stirring in a clove of raw garlic into the finished soup.

Is Chicken Soup Good for a Cold? Why is it Healing?

  1. There are healing properties in the onions, garlic and chicken that are said to reduce inflammation for nasal congestion and upper respiratory issues.
  2. Carrots produce vitamin A which helps create white blood cells which in turn help fight off infection.
  3. Cumin has anti-inflammatory properties and is a very strong antioxidant. All great for when you have a cold.
  4. Ginger also helps with inflammation, can help reduce pain and helps with nausea.

How to make quick & easy chicken soup:

  • Start with a flavorful base of aromatics: onion, celery and carrots in olive oil.
  • Flavor the base with subtly spicy and warming ginger, garlic, herbs, salt and pepper.
  • Add the starchy plantains and simmer in rich chicken broth until tender.
  • Stir in the pre-cooked chicken thighs. You can also use shredded rotisserie chicken.
  • Boost the nutrient density and richness of the broth
  • Finish the soup with acidic lemon juice and apple cider vinegar to brighten the flavors.

This soup is exactly the thing we all need more of right now. Our food has become so important healthy but comforting, warm and soothing like a blanket in a bowl.

Ingredients

  • 2 tablespoons olive oil

  • 1 onion chopped

  • 3 large carrots sliced

  • 3 celery stalks chopped

  • 4 cloves of garlic chopped

  • 1 leek stalk chopped

  • 1 bag frozen peas

  • 1 bag frozen corn

  • 1 bag of fresh mushrooms sliced

  • 3 garlic cloves minced

  • 1 can black beans, rinsed

  • 1 can tomatoes with juices

  • ½ teaspoon cumin

  • 1 ½ pound chicken breast cut in chucks-seasoned w/ essence seasoning

  • 1 bay leaf

  • Salt and pepper to taste

  • Parsley for serving

  • 2 chicken Broth 32 oz each

Directions

  • In a large soup pot, heat olive oil on medium heat.
  • Add season raw chicken and cook till browned, about 7 minutes.
  • Add onion & ginger and cook 3 minutes.
  • Add other vegetables leeks, carrots, celery and cook 5 minutes until they soften.
  • Add mushrooms and garlic.
  • Add chicken stock, corn, peas, black beans and tomatoes.
  • Add spices cumin and bay leaf.
  • Cover and bring to a boil.
  • Once boiling, reduce heat to medium low and cook until done.
  • Garnish with parsley.
  • Salt, pepper or hot sauce to taste.
