Steel-cut Oatmeal with Fresh Fruit:
It’s Monday and it’s time to get back on track with healthy eating habits. I too struggle with how to put breakfast on the table quickly and healthly. Breakfast is important to getting your day off to a great start and it gives you the energy you need to get it cracking early. I love Steel-cut Oatmeal but it’s not a quick fix breakfast because it takes 25 to 30 minutes to make. To expedite the process I make a batch of it on Sunday night and keep it in the refrigerator for up to 5 days. Bam! On Monday it’s a quick breakfast for the family. You can add any kind of fruit you like from fresh fruit to dried fruit, milk, honey, agave or whatever you like. Here’s one of my versions of yummy warm oatmeal with fresh fruit. Besides my kryptonite of 1 cup of coffee in the morning, I have to put something in my stomach to get through the morning rush and my workout! My kids love oatmeal too!
I’ve been up before the crack of dawn today since the time has changed! Spring forward!

Recipe for Steel-cut Oatmeal:
4 cups of water or (2 cups of water & 2 cups of orange juice) 1 cup Steel-cut oats Fruit (strawberries, bananas, dried fruit, oranges, raisins, nuts etc.) 1 tbs. honey, agave, maple syrup, brown sugar to sweeten 1 tbs. of butter
Bring water to a boil. Slowly stir in the steel-cut oats. When oatmeal begins to thicken (about 5 minutes), reduce heat. Simmer uncovered for about 30 minutes stirring occasionally. Once done serve with butter, agave or whatever sweetener you prefer with your choice of fruit and nuts.
