Caesar Salad with Anchovies:

Health is everything! It doesn’t matter if you’re rich or poor because when you have your health you have the power to change any circumstance.  You need good health to have the strength to conquer whatever you face.  Look at one of the most influential men of our time, Steve Jobs.  He had everything a person could possibly wish for, more money than God and I’m sure he would have given it all up to live a longer, healthier life.

Those who make physical, mental and emotional well-being a priority at home may find that enriching your body and soul brings you closer to your ultimate goals.  This is my personal journey!  How do I accomplish this? By taking one step at a time.

January is the month that we all associated with starting a healthier lifestyle.  After eating and drinking from Thanksgiving until New Years Day we all could use some cleansing.  Everyday is a journey toward how I can eat healthier, work out more and be happy with where I am in my life, right now.  Oh yeah, I have lots of goals to accomplish but I’m trying to enjoy every step getting there.

As much as I love food and wine, it’s time for great salads and soups.  So, there will be lots of great salads and soups featured on the blog!

Caesar Salad with Anchovies:

Ingredients:

Extra-virgin olive oil 1 small ciabatta loaf, cubed (optional) Salt and freshly ground black pepper 1 to 2 garlic cloves, pressed 2 to 3 anchovies, oil drained and rinsed in warm water *1 egg yolk  (optional) 1/2 lemon, juiced 2 heads romaine lettuce hearts, torn into bite-size pieces 1/4 cup shaved Asiago cheese

Directions:

In a large frying pan, add enough oil to coat the bottom of the pan and toast cubed bread over medium heat until golden brown. Remove from heat, season with salt to taste and reserve.

In a large bowl, add garlic, anchovies, salt and pepper, to taste. Mash with the back of a fork. Whisk in the yolk and lemon juice. Slowly drizzle in oil, whisking until emulsified. Taste and adjust seasoning.

Add lettuce, cheese, and croutons and toss to combine. Serve immediately.
