It’s 2020!! I can’t believe it’s here already 😅
But the top of the year in my family means Gumbo recipes, which are always my favorite! I’ve decided to share with you this week some of my favorite Gumbo recipes through the years.
Gumbo is perfect for cold nights, for days when you’re entertaining a crowd, or when your family just wants something special. It’s so warm, and the broth is so delicious after soaking in all the delicious seasonings.

1 ½ cups Medium Dark Roux “How To Roux”, recipe follows
2 cups diced onions
1 cup diced celery
1 cup diced green bell pepper 1 tbsp garlic, finely chopped
1 tbsp garlic, finely chopped
2 squats shrimp & crab stock or chicken stock and/or clam juice
1 pound andouille sausage sliced into ¼ inch thick rounds, browned in a skillet and drained on paper towels
2 bay leaves
1 tbsp Worcestershire sauce
Dash hot sauce
¼ tsp cayenne
½ tsp salt
¾ freshly ground black pepper
2 pounds shrimp peeled and deveined
1 tsp essence recipe follows
½ pound crab legs
2 jars 12 fresh oysters and juices
Optional: ⅓ cup green onion tops chopped
Optional: ½ cup parsley leaves coarsely chopped
Optional: 2 tbsp fresh thyme leaves chopped
Optional: 1 tbsp fresh basil leaves chopped
Optional: ½ cup file powder or to taste
