Grilled Watermelon Salad:
Yikes! I can’t believe that my kids are going back to school on August 14th? What the heck is LAUSD doing sending kids back to school during the hottest time of the year? It’s way too soon and I feel like they have stolen a month of my leisure time with my babies! One more week to go before we’re back to the hustle and bustle of the school year so it’s party time all week long.
Today’s Grilled Watermelon Salad recipe is a great summer salad that I found in “In-Style” magazine. I love it because who would think about grilling watermelon? Something new!

Grilled Watermelon Salad Recipe:
1 small (about 5 lb.) seedless watermelon, cut into 8 slices 2 tbsp olive oil 2 bunches spinach, trimmed 2 tbsp balsamic vinegar 1 cup crumbled feta or goat cheese Salt and pepper
Heat grill. Brush watermelon slices with oil. Season with salt and pepper. Grill watermelon 1–2 minutes on each side.
In medium bowl toss spinach with vinegar. Season with salt and pepper to taste. Set aside.
To assemble, sprinkle each grilled watermelon slice with feta or goat cheese. Top with spinach mixture.
