It’s a Girl’s Cocktail Party at Ali’s house! It’s time for a Girls Night In! So text your girls and make plans for a fun and relaxing night in. Nothing fussy, just close friends, delicious food, drinks and wear something comfortable because we going in! Lol!

If you can’t remember the last time you hung out with your BFF’s, then it has been way too long. This post is for you! We are talking about a night at home. No boys allowed. This is a night for laughing out loud, sharing old pictures, and catching up on all the gossip. You know those nights when you just stay in with your girls? Staying up way too late watching sappy movies. You laugh so hard it hurts. You swap stories, rehash old memories…aren’t those the best nights ever?

In my book, a Girls Night In is ten times better than going out on the town. Plus you can relax. We ALL need more of that, I know I do and it took me long enough to get it done!

Girls Night In – The Food

This is my indulgent night which means I go deep into my cheese cravings…Blue Cheese, Aged Cheddar, Brie, Gorgozola and anyother cheese you love! I am about to let you in on the biggest secret of all time. When you eat food with your best friends, it has no calories and no carbs. All the more reason to get together for girls night in, right?

( 1/2 cup of champagne 1/2 cup of gummy bears)

Melon Basil Prosciutto Mozzarella Bites

How cute, right? This is a delicious salad on a stick…melon, basil, prosciutio and herb mozzarella balls for a pretty appetizer your friends will love. Super simple to make. First use a melon baller to scoop out your favorite melon into ball shapes. I used cantaloupe but watermelon and honeydew are awesome too. Using picks or small skewers, then add a piece of melon, and top with a basil leaf and mozzarella bite. I love these tasty treats! You get the salty fresh mozzarella and the bite of basil. Then the mildly sweet melon followed by the tart pop of berry.

That’s it! Fancy with no fuss. Plus they taste delish and no directions here except wash and throw your favorite fruit in a bowl.  Also great for your food conscious friends, lol!

Vegan Chili 

This hearty vegan three bean chili is packed with pinto, black, and Great Northern beans. It’s spiced with cumin, chili powder, and a bit of mustard and hot sauce for a slightly vinegar-y tang. It’s ready to eat in less than half an hour. Vegan & gluten-free. This is a Vegan person hearty dinner and my girls loved it including the meat eaters who didn’t realize it didn’t have any meat until the non-meat eaters told them. Lol

Chicken Tikka Masala

Chicken Tikka Masala! Here’s my quick and easy party version of this recipe made with Patak’s Tikka Masala Sauce that you can buy at World Market, Trader Joes or any other store. Nothing complicated here but follow the directions on the back and since I’m cooking for a crew I just tripled the recipes ingredients. This recipe is so EASY, made on the stovetop and tastes just like take-out! Ready in just 30 minutes, this Chicken Tikka Masala can be on the table in no time and was completely finished off quickly!

Fruit Honey Greek Yogurt Granola Parfait 

And for a yummy dessert I made these cute cups of this deliciousness. I love how tasty these Fruit Honey Greek Yogurt Granola Parfait  are and not a lot of calorie intake but who’s counting a the girls party.  Sometimes I make this for breakfast too because it’s tasty, healthy and gives you the just-right fullness but it’s also perfect a light dessert.

Now that the holidays are quickly approaching and my husband is about to hit the road I’m planning on a holiday Girls Cocktail Party!

Melon Basil Prosciutto Mozzarella Bites

Cantaloupe and prosciutto are a classic combination. Our version of this appetizer adds basil for a spicy bite and mozzarella for creaminess.

  1. 1/2 cantaloupe cut into bite size pieces

  2. 15 fresh mozzarella mini balls

  3. fresh basil about 2 cups loose

  4. 10 slices of prosciutto cut into 3-4 strips each

  5. skewers or toothpicks

  6. 1/4 cup Balsamic optional


Assemble melon, mozzarella, basil and prosciutto on skewers. Positon completed skewers on a plate. Drizzle the balsamic over the skewers and serve immediately. If making ahead, assemble the skewers, arrange on plate, cover with plastic wrap and refrigerate. Drizzle balsamic right before serving.

  1. 1/2 teaspoon extra virgin olive oil

  2. 1/2 cup onions chopped medium

  3. 2 cloves garlic minced

  4. 1 14.5 ounce can fire roasted diced tomatoes

  5. 1 1/2 cups Great Northern beans drained and rinsed

  6. 1 1/2 cups pinto beans drained and rinsed

  7. 1 1/2 cups black beans drained and rinsed

  8. 1 cup water

  9. 2 teaspoons ancho chili powder

  10. 1 teaspoon paprika

  11. 1 1/2 teaspoons cumin

  12. 1 Tablespoon hot sauce

  13. 1/2 teaspoon yellow mustard

  14. Salt and pepper to taste

  15. Optional toppings: Minced onions chopped cilantro, grated non-dairy cheese, crackers


Bring a medium-sized soup pot to a medium heat with extra virgin olive oil. Sauté onions and garlic a few minutes, until fragrant.

Add the remaining ingredients (except for the optional toppings) to the pot and stir. Bring the heat to a simmer and cook for 15 to 20 minutes, allowing the chili to thicken. Stir occasionally.

Optional: After the chili has thickened, use an immersion blender in the pot for 3 or 4 seconds to break up some of the beans and thicken the soup further. You don't want to blend the chili completely. It should still be thick and chunky. However, a few seconds with the immersion blender gives some added texture and thickens the chili even more.

Serve in bowls with optional toppings.

  1. 2 tbsp. olive oil

  2. 1 large onion chopped

  3. 2 garlic cloves finely chopped

  4. 1 jar of Patak's Tikka Masala Spice Creations

  5. 1 Ib chicken breast diced

  6. 1 can diced tomatoes

  7. Coriander and lime to garnish optional


Heat the oil in a large saucepan. Add onion and garlic. Cook until soft (about 5 minutes).

Add the spices of Patak's Tikka Masala Spice Creations and cook until aromatic. Add the chicken and cook until browned.

Add the tomatoes and bring to the boil. Then reduce to simmer and cook for a further 15-20 minutes. Add water if required.

Double the amount for a party style cooking

  1. 1 pkg. of your favorite granola

  2. 1 c. honey greek yogurt

  3. fruit of your choice

  4. pineapple sliced ,blueberries, strawberries(sliced), raspberries

  5. organic honey

  6. chopped dark chocolate optional (I used chopped dark chocolate chips)


When ready to assemble, place granola or yogurt in bottom of glass. Add a layer of fruit, drizzle honey and mint then chopped dark chocolate, enjoy!
