Friday’s Cocktail is a Skinny Mojito…

Summertime is all about sipping great cocktails by the pool and this very easy Skinny Mojito is incredibly refreshing without packing on the pounds. I’ve been working my tail off this summer to stay in shape without gaining extra pounds from drinking and eating to much! When I do splurge on a meal or cocktail, I try my best to cut back on other days. With this recipe though, I feel like I’m splurging when I’m not!

I absolute love the flavors of mint, lime and honey blended together in this cocktail. Instead of muddling the mint leaves (like a traditional mojito) I change it up a bit by using my Magic Bullet blender instead. Wow! Blending the mint leaves in my Magic Bullet gives this cocktail a tremendously vibrant green color that looks and taste like your drinking from the fountain of youth…with a little rum added in! LOL! This Skinny Mojito is great for sitting by the pool and just being! That’s what I’ve planned this weekend, just being!

Friday's Cocktail is a Skinny Mojito…

Easy and Refreshing Skinny Mojito


  1. 1 big handful fresh mint leaves

  2. 1 lime

  3. 3 oz white rum

  4. 2 tbsp of honey or agave

  5. Ice


  1. Get out two party cups (or tall cups), and fill each one about 2/3- 3/4 of the way full with ice.

  2. Pour 1 1/2 oz of rum into each cup, and then squeeze the juice of a half a lime into each. Top with 1/2 handful of fresh mint and 1 tbsp of honey.

  3. Toss into the blender and pop on your cross blade blending until you don’t hear big chunks of ice whirling around anymore.

  4. Pour into a glass (or just screw on the party cup lid if you prefer), top with a sprig of fresh mint, and enjoy!
