Flank Steak Tacos…


It is starting to feel like Springtime and I couldn’t be happier! As you know I love me some tacos, so here is my quick and easy Flank Steak Taco recipe that is so versatile it’s good for any occasion.  I love using flank steak because it cooks quickly with little chance of drying out. Flank steak is a lean, somewhat tough, but delicious cut of beef that benefits from the tenderizing effects of a marinade. Once it is seasoned it packs a whole lot of flavor.  It is best sliced thinly at an angle and cooked medium rare. This recipe calls for grilling the steak, but if you don’t have a grill, you can prepare the steak on a large cast iron frying pan as well. Add cheese, lettuce, cherry tomatoes, guacamole and hot sauce and oh baby!

Flank Steak Tacos...

Ingredients

  1. Marinade Ingredients

  2. 1/3 cup olive oil

  3. 2 cloves garlic minced

  4. 2 Tbsp red wine vinegar

  5. 1/3 cup soy sauce

  6. 1/4 cup honey

  7. 1/2 teaspoon freshly ground black pepper

  8. Other ingredients

  9. 2 pounds flank steak

  10. Kosher salt

  11. Freshly ground pepper

  12. 2 cups loosely packed shredded lettuce

  13. 2 to matoes diced

  14. 2 tablespoons finely minced cilantro

  15. 1-2 avocado pitted and sliced

  16. 1 cup crumbled queso fresco or other shredded cheese of your choice

  17. 1 lime cut into wedges

  18. 8 flour or corn tortillas

Instructions

Place steak and marinade ingredients in a large freezer bag. Coat the steak well with the marinade. Seal the bag and place in a bowl. Chill and marinate for at least 2 hours and up to overnight. Take the steak out of the marinade bag and sprinkle generously on all sides with coarse salt and freshly ground pepper. The salt and pepper will help form a savory crust on the steak. Place steak on the hot grill. Grill for 4-6 minutes on each side. Let the meat rest for 5 minutes before slicing. Slice the skirt steak across the grain into very thin ribbons. Assemble tacos by layering steak, lettuce, diced tomatoes, cilantro and avocado slices. Top with cheese and serve with lime wedges.
