Fish Tuesday…Spring Greens with Smoked Lox

Spring Greens with Smoked Lox is my delightful twist on the traditional Lox and Bagels…but served as a salad. Yes, I love lox and bagels on occasion, but not now — now it’s all about the New Healthy! So here’s a healthier version without all the fattening stuff! Honestly, I didn’t miss the cream cheese. LOL!

Who are you and want do you want out of your life? I ask myself this question every morning which keeps me focused on my goals and aspirations. At the moment, I’m listening to Beyonce’s new album and am mesmerized by her videos. Wow! Just when I thought she had nothing else to tantalize the world with she drops it like it’s hot! Blazing hot! Another woman’s anthem of powerful independence and sexuality with no excuses. Brings me back to the saying “I can bring home the bacon and fry it up in the pan!”  Yeap! If we want it all, then damn right, we deserve to have it all! But on our own personal terms! So…What are your terms?

My terms include being happy, healthy, successful, defying age and having lots of fun doing it all! And most important, not walking in anyone else’s footsteps!

Spring Greens with Smoked Lox…

  1. Herbed dressing:

  2. 2 tablespoons fresh lemon juice

  3. 1 garlic clove (pressed)

  4. 1/4 cup extra-virgin olive oil

  5. 1/4 cup chopped fresh chives

  6. 1 tablespoon chopped fresh Italian parsley

  7. Greens:

  8. 3 tablespoons extra-virgin olive oil

  9. 1 1/2 tablespoons fresh lemon juice

  10. 1 5- ounce package mixed baby greens

  11. 1 small head of radicchio (coarsely torn)

  12. 1 1/4 to 1 1/3 pounds smoked lox fish fillets (or trout and/or whitefish, skin and any small bones removed, fish broken into bite-size pieces)

  1. For Herbed Dressing: Combine lemon juice, and garlic in medium metal bowl; whisk to blend.

  2. Gradually whisk olive then whisk in chives and parsley. Season dressing to taste with salt and freshly ground black pepper.

  3. For Greens: Whisk oil and lemon juice in medium bowl to blend. Season dressing to taste with salt and pepper. Combine greens and radicchio in large bowl. Add dressing and toss to coat. Arrange greens mixture on large platter or divide among plates. Top with fish. Drizzle some dressing over.
