Fish Tuesday…Salmon and Greens…

We love fish! This delicious Salmon and Greens recipe is a quick and easy one pan dish to prepare! This recipe is like building blocks, first olive oil, onion, salmon, lemon slices and then the greens added on top, all seasoned with salt and pepper. Covered and cooked until the greens are wilted and salmon is cooked to your satisfaction. It’s awesome, if i do say so myself! I stumbled upon fresh wild caught Salmon at Ralph’s on sale for $9.99 per pound, not a bad price.

As you can tell,  My family loves Salmon so much that when we order it from our favorite sushi restaurant the chef makes jokes that we’re eating it like it’s going out of style, Yikes! It’s literally becoming more difficult and more expensive to get fresh wild caught fish. This Salmon was so tasty, I’m going back tomorrow to buy more so me and the kids can use it when we attempt to make our own homemade salmon sushi rolls. Stay tuned!

Salmon and Greens



  1. 2 teaspoons extra-virgin olive oil

  2. 4 6-ounce salmon fillets, skin on

  3. Salt and pepper

  4. White onions (Maui-sliced in thin rounds)

  5. Lemon slices (for garnish)

  6. Sautee Spinach Ingredients:

  7. 2 tablespoons extra-virgin olive oil

  8. 1 teaspoon crushed garlic

  9. 1 cup frozen onions

  10. 12 ounces pre-washed southern style greens (Trader Joe's)

  11. Kosher salt

  12. Freshly ground black pepper


  1. Heat a large sauté pan over high with olive oil. Liberally season salmon with salt and pepper. Place onions slices in pan. Add salmon fillets skin side down on top of onion slices followed by lemon slices on top of salmon. Add the greens to pan. Reduce heat to medium-low and cover with top. Do not move fillets. Allow to cook about 7 minutes or until inside is no longer bright pink but still moist. Squeeze the lemon over the top, and add the red pepper and salt and black pepper. Toss well and serve.Serve immediately!
