I’m a busy bee at the moment, but wanted to share this simple Herb Marinated Swordfish recipe for Fish Tuesday! I love swordfish because it has the texture of a steak but doesn’t have the heaviness that accompanies a big piece of meat. Swordfish is easily marinated and tastes simply divine! Serve it along side your favorite grilled vegetables for a healthy Fish Tuesday meal.
Stay focused, stay positive and stay on your grind!

2 swordfish steaks
2 cloves garlic chopped
1-2 tablespoons chopped fresh parsley
1 generous teaspoon minced fresh rosemary
1 generous teaspoon chopped fresh thyme
1 tablespoon olive oil I used lemon olive oil
About 1/2 teaspoon sea salt + lots of cracked black pepper
Place swordfish steaks in a large sealable plastic bag or medium bowl.
In a small bowl, combine ingredients for marinade. Transfer marinade to bag/bowl with fish and use your hands to massage marinade all over fish until evenly coated. Seal or cover with plastic wrap and place in fridge for several hours.
Remove fish from fridge and heat outdoor grill or indoor grill pan over medium to medium-high heat.
Grill for 4-5 minutes per side, depending on thickness, until just opaque in center.
