Don’t forget your Veggies!

What has happen to me?! I sound like my Mother! LOL! Yes, I make my kids eat their veggies daily but vegetables don’t have to be boring and flavorless. Simply cook fresh carrots and french beans with garlic, olive oil, a little salt and pepper and sprinkled parsley on top. It’s perfect for dinner, lunch, salad or whenever you need to get your share of healthy delicious veggies!

Most grocery stores now carry prepackaged, fresh vegetables ready to microwave. They’ve done all the trimming and washing for you which makes it easier than ever to serve fresh vegetables quickly. They also come in many varieties and mixtures. You can steam them in the bags provided or sauté them…which is the way I prefer!

This recipe uses haricots verts or French string beans and matchstick carrots in very convenient and already prepared for cooking packages. By mixing the carrots with the string beans you give your dish color and added flavor. The end result is a delicious vegetable side dish that looks like it would be served by a chef in a gourmet restaurant. Simple enough to serve to your family on a weeknight, yet pretty enough to serve dinner guests.

  1. 1 bag cut and trimmed string beans

  2. ½ cup matchstick carrots

  3. ½ tsp. minced garlic

  4. 2 tbls. olive oil

  5. Salt and pepper to taste

  6. Minced parsley for garnish


Heat olive oil on medium heat for about 1 minute. Add the string beans, minced garlic and matchstick carrots. Sauté for 3 minutes. Add salt and pepper to taste and reduce heat to low. Cover and simmer until desired tenderness. Check with fork every 2 minutes until cooked.
